European cuisine offers a rich selection of dishes varying from exquisite cuisines like French Cuisine to more robust and traditional dishes accross the Europe. It can be conditionally divided into Western- and Eastern cuisines which reflect food traditions and history of related countries.
Note, that as far as food recipes are concerned, West- and Central- European cuisines share a lot of common features and can be considered as a one group of cuisines.

West-European Cuisine

Four most frequently mentioned West-European cuisines are French, Italian, British and German, with many other West-European cuisines being known in their own way.

French

French cuisine is famous for its delicacies, exquisite taste, presentation and original cooking techniques. It is known for many specific styles including fine Haute cuisine, known for its meticulous preparation, elaborate presentation, and use of high-quality ingredients.

Italian

Known for its fresh ingredients and simple preparations, Italian cuisine has a long history and has been influenced by many cultures with variety of pizza and pasta dishes making Italian cuisine famous accross the globe.

British

British cuisine is known for its unique blend of cooking traditions that originated from England, Scotland, Wales, and Northern Ireland and enriched by flavors from East Asia and Africa over the centuries of British presence there. Some famous British dishes include: Fish & Chips, Roast Beef, Yorkshire Pudding, Shepherd's Pie, and variety of puddings, tarts, and trifles.

German

German cuisine is known for its variety of sausages, hearty flavors and balance of savory, rich, and tangy tastes. Some famous German dishes include: Schnitzel, Currywurst, Sauerbraten, Pretzels and Rouladen.

East-European Cuisine

East-European cuisine is a melting pot of many different cultures, ethnicities, languages, and histories of thier nations. Some of most frequently mentioned East-European cuisines include (but not limited to):

Polish

Polish cuisine is known for its staple dishes like Pierogi, Golabki, Bigos (often referred to as Hunter's Stew), Placki Ziemniaczane (Potato Pancakes) and many others.

Russian

Russian cuisine offers a robust selection of dishes and was cross-influenced by Slavic Countries Cuisines sharing with them some staple dishes. Some famous Russian dishes include: Beef Stroganoff, Bliny (Russian Pancakes), Borscht (vegetable-meat soup), Golubtzi (stuffed cabbage leaves), Pelmeni (Russian dumplings) and Stolichniy Salad (Russian version of Olivier Salad). with black and red caviar presenting a delicious and expensive choices.

Ukranian

The brief list of most famous traditional Ukrainian dishes includes Ukranian Borshch (a sour soup with distinctive red colour), Varenyky, Holubtsi, Chicken Kyiv, Banosh, and Syrnyky.

Note, many East-European cuisine dishes cross the specific country borders, so finding the origins of some East-European dishes is often times a difficult task. While you can find the "same" dish names in different countries, the speciifc ingredients used and the ways to cook and season these dishes may be very country specific.
